Ingredients
1.5-2 lbs Ledingham Livestock round steak, cut into large chunks
1 tbsp olive oil
1 large onion, sliced
3 cloves garlic, minced
2 cups beef broth
2 tbsp Worcestershire sauce
1 tsp dried thyme
1/2 tsp smoked paprika
Salt and black pepper, to taste
2 tbsp cornstarch + 2 tbsp water (for thickening the gravy)
Instructions
Sauté the steak and onions
Turn the Instant Pot to Sauté mode. Add the olive oil.
Season the round steak chunks with salt and pepper. Sear the pieces in batches for 2-3 minutes per side until browned. Remove and set aside.
Add the sliced onions and garlic to the pot. Sauté for 2 minutes, stirring to scrape up browned bits.
Pressure cook
Return the steak to the Instant Pot. Add the beef broth, Worcestershire sauce, thyme, and smoked paprika. Stir to combine.
Close the lid, set the valve to Sealing, and pressure cook on High for 25 minutes.
Allow for a 10-minute natural release, then quick release the remaining pressure.
Make the gravy
Remove the steak and set it aside. Turn the Instant Pot back to Sauté mode.
Mix cornstarch and water to make a slurry. Stir it into the broth and cook for 2-3 minutes until thickened.
Serve
Return the steak to the gravy or serve it drizzled with gravy over mashed potatoes, rice, or noodles.
