Instant Pot Round Steak and Gravy


This steak and gravy dinner comes together quickly and is a hearty addition to any week night meal.

Ingredients

  • 1.5-2 lbs Ledingham Livestock round steak, cut into large chunks

  • 1 tbsp olive oil

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • 2 cups beef broth

  • 2 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1/2 tsp smoked paprika

  • Salt and black pepper, to taste

  • 2 tbsp cornstarch + 2 tbsp water (for thickening the gravy)

Instructions

  1. Sauté the steak and onions

    • Turn the Instant Pot to Sauté mode. Add the olive oil.

    • Season the round steak chunks with salt and pepper. Sear the pieces in batches for 2-3 minutes per side until browned. Remove and set aside.

    • Add the sliced onions and garlic to the pot. Sauté for 2 minutes, stirring to scrape up browned bits.

  2. Pressure cook

    • Return the steak to the Instant Pot. Add the beef broth, Worcestershire sauce, thyme, and smoked paprika. Stir to combine.

    • Close the lid, set the valve to Sealing, and pressure cook on High for 25 minutes.

    • Allow for a 10-minute natural release, then quick release the remaining pressure.

  3. Make the gravy

    • Remove the steak and set it aside. Turn the Instant Pot back to Sauté mode.

    • Mix cornstarch and water to make a slurry. Stir it into the broth and cook for 2-3 minutes until thickened.

  4. Serve

    • Return the steak to the gravy or serve it drizzled with gravy over mashed potatoes, rice, or noodles.
